This recipe takes your roasted vegetables to the next level with the magic of an Umami spice blend. The caramelized veggies get a delightful savory boost, making them a perfect side dish, appetizer, or even a vegetarian main course.

Ingredients:

2 tablespoons olive oil
1 pound assorted vegetables (such as broccoli florets, Brussels sprouts, carrots, red onion wedges, cauliflower florets)
1/2 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

Instructions:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Wash and prepare your chosen vegetables. Cut them into bite-sized pieces for even roasting.

In a large bowl, toss the vegetables with olive oil, thyme, rosemary, salt, and pepper. Ensure all the vegetables are evenly coated.

Spread the seasoned vegetables onto the prepared baking sheet in a single layer, making sure they are not crowded. This allows for even browning and crisping.

Roast the vegetables for 20-25 minutes, then flip them over with a spatula for even cooking. Continue roasting for another 15-20 minutes, or until the vegetables are tender-crisp and slightly browned.
